These baked apple cider donuts are easy donut shaped cakes. They are infused with fresh apple cider and coated in cinnamon sugar and apple pie spices. No donut pan? Make muffins instead!

Apple cider donuts are extremely popular in locations with apple orchards and cider mills, but can be found seasonally during the fall months in most grocery stores.

Oven-fried donuts use a donut machine that easily shapes the batter into circles as it is dropped straight into the fryer. (It’s actually quite fun to watch – a fond memory of my days as a donut decorator.)

Frying donuts at home with soft cake batter is much more difficult. First you would need to pipe the dough onto parchment paper and let it chill in the fridge. Then you would cut around each donut and drop them individually into the frying oil.

Baked donuts are easy to make with donut pans. No mixer, rolling pin, or donut cutter required! Plus, they’re much healthier, as you won’t be dealing with any extra fat from the frying oil when you bake.

Fresh cider is raw apple juice that has not gone through a filtration process to remove coarse particles of pulp or sediment. Apple juice is juice that has been filtered to remove solids and pasteurized so it stays fresh longer.

Now that you know the difference between apple cider and apple juice, where do you find it in the store? Apple cider can be shelf stable or chilled.

The best apple cider to use for these donuts is fresh apple cider. You’ll find fresh apple cider in milk jugs in the refrigerated section of the store near the other juices.

If it’s not in season, you can still find still apple cider in the juice aisle. It can be near the apple juice or in the organic and natural section of the store.

This baked apple cider donuts recipe is divided into three parts: apple cider reduction, dry ingredients, and wet ingredients. It is extremely simple to do.

NOTE: Do not overfill doughnuts. If you have extra batter, bake it into cupcakes for about 14 minutes.

You can store them at room temperature in an airtight container for up to 3 days. Feel free to nuke them in the microwave for 10 seconds if you want to reheat them.

Eating an apple cider donut covered in cinnamon and sugar takes me to the apple orchard – a warm donut covered in lots of sweet sugar, so much so that it coats your mouth after each bite. Such a fun fall tradition.

So, this year I decided to make my own Baked Apple Cider Donuts. They are light and cinnamony, they are filled with apple cider that has been reduced to make a stronger apple flavor, and they are covered in tons of sugar and cinnamon.

The only tool you’ll need that you may not have on hand for these is a donut pan. You can grab the ones I have here – or you can also find them at Target and many other stores.

Make sure it’s a nonstick pan. This will help the donuts release easily and keep their shape.

The best part is how easy these are to make! Mix up an easy batter, then press into a donut pan, bake for 9-10 minutes, and bam, you have delicious hot donuts.

Chocolate Glaze: Bring 1/2 cup heavy whipping cream and 2 tablespoons light corn syrup to a boil; pour over 6 ounces of chopped semisweet chocolate. Mix with a whisk until smooth. If you want to use the oven, ask for the help of a donut pan to help keep their shape. Bake at 350° for about 15-18 minutes. Or try a no-fried donut recipe! How do you keep apple cider donuts fresh? Apple cider donuts are best eaten immediately. If you want to keep them fresh for 2-3 days, store them in an airtight container at room temperature. Wow, you can! Add 1/2 teaspoon of xanthan gum to your gluten-free flour to allow protein bonds to form and the dough to stick together properly. You can substitute gluten-free flour 1:1 with regular flour.

Fear not, I totally understand and luckily for you this recipe is easily converted. If you don’t like frying or don’t have the necessary equipment, these will pop in the oven nicely.

If you can’t find some in the store, or if you didn’t feel like buying some just for this recipe – fear not! You can make your own buttermilk quite easily with just regular milk and something acidic.
